Salt & Straw, initially founded in Portland, Oregon, has gained nationwide recognition for its inventive flavors and commitment to sourcing locally produced, sustainable ingredients. Their Disney Springs location opened in 2022 and quickly became a fan-favorite among visitors looking for something beyond traditional ice cream.
One of Salt & Straw’s standout features is its rotating menu of imaginative flavors. While guests will always find classic options like Sea Salt with Caramel Ribbons or Chocolate Gooey Brownie, seasonal flavors often steal the spotlight. Well, it is time to find out what new monthly limited-time Salt & Straw ice cream flavors we get this month. Okay, we know that Salt & Straw does not change flavors monthly. They change flavors on a Friday close to the end of the month, which is today, April 4.
As we welcome a new ice cream series available at Salt & Straw, we bid farewell to the previous one: The Cereal-sly Delicious Series. We expect to see some of those fun flavors again sometime next year.
Upcycle Series Returns to Salt & Straw

Salt & Straw feels passionate about food waste. Salt & Straw’s Upcycle Series is an ice cream collection dedicated to reducing food waste by transforming overlooked ingredients into delicious frozen treats. Launched as a creative sustainability initiative, the series highlights how upcycled ingredients, foods that would otherwise go to waste due to imperfections or surplus, can be repurposed into gourmet ice cream flavors.

Each year, the Upcycle Series partners with sustainability-driven producers, food innovators, and nonprofits to source ingredients that would typically be discarded, such as surplus bread, bruised fruit, or leftover coffee grounds. Past flavors have included upcycled cacao pulp, leftover croissants, and even spent grains from brewing. The goal is to spotlight food waste issues while delivering unique, high-quality flavors.

By combining culinary creativity with environmental consciousness, Salt & Straw’s Upcycle Series raises awareness about food waste and encourages customers to think differently about sustainability. Yes, they are raising awareness one scoop at a time. Over the past five years, Salt & Straw has saved 40,000 pounds of food by turning it into ice cream.

Salt & Straw decided to use April for the Upcycle Series this year. These flavors will be around until May 1.

-Chocolate Malted Potato Chip Cupcake – using products from Renewal Mills.
-Sourdough & Olive Oil Chocolate (Vegan) – using upcycled barley milk and working with Ever Grain.
-Salted Grapefruit Coconut Julep – using Wheyward Spirits.
-Banana Parsnip Sherbert -working with Urban Gleaners.
-Coffee & Stone Fruit Marmalade – using products from Atomo Coffee and Hello I’m Ugly Fruits.
Obviously, our preferred Salt & Straw location is at Disney Springs. This ice cream shop is near one of the AMC theatre entrances across from Summer House on the Lake. During our visits to Disney Springs, we may try these new flavors.
Another Disney Springs food location, Wine Bar George, is hosting several special April events and promotions. STK Orlando, also at Disney Springs, is offering a special March Madness take-out deal on burgers, wings, and loaded fries. Also, Gideon’s Bakehouse started selling a brand-new cookie for April 2025.
