Things have been busy in the world of food reporting. Still, Disney Springs fans know Gideon’s Bakehouse and Everglazed Donuts & Cold Brew bring back fan-favorite monthly items for February each year. This year, some familiar treats returned for guests.

For those unfamiliar with Gideon’s Bakehouse Disney Springs, this bakery has drawn large crowds since its official opening day, which clocked a nine-hour virtual queue. While they’re known for their excellent cakes, cold brew coffees, and other bakery items, the famous half-pound cookies are the stars.

This marks the fifth year Gideon’s Bakehouse at Disney Spring has sold The Eternal Flame Cookie. It consists of dark chocolate cherry cookies infused with ancho, cayenne, and cinnamon, topped with a light coating of chocolate-covered cherries.

Gideon’s Bakehouse claims The Eternal Flame Cookie offers some heat, but it would only be a medium level of spice for most people. In our experience, the cayenne provides the most kick in this cookie. Still, even people averse to spice could share this half-pound cookie. As expected, guests will find plenty of chocolate chips in this cookie.

Gideon’s Bakehouse also brought back another limited-time monthly favorite for February 2025. Guests can enjoy the White Chocolate Macadamia Nut Cookie. Fans of white chocolate will love this. It is sweet without crossing the line of being too sweet. Both cookies cost $6.50, the standard price for the monthly cookies.

Thin Mint Chocolate Chip Donut at Everglazed Donut & Cold Brew

Girl Scout Cookie fans appreciate this donut. Everglazed Donut & Cold Brew, located near an entrance/exit of the Orange Garage at Disney Springs, serves donuts, cold brews, sandwiches, burgers, fries, and other beverages. It features limited indoor seating but a lovely patio.

The “Girl Scout Cookie-inspired” donut known as the Thin Mint Chocolate Chip Donut is available in February. Everglazed describes it as “a chocolate glazed donut topped with crumbled Thin Mints, chocolate buttercream, mini chocolate chips, and mint icing.” Everglazed enjoys placing candy and frosting on top of its large doughnuts.

As expected, you need to like sugar for this one. You also need to enjoy mint in various forms. The doughnut suffers slightly, being overwhelmed by all the toppings. Still, the toppings tasted great. This will cost guests $6.50 for the large sharable donut.

People looking for a sweet treat should consider stopping at Disney Springs this month before these items disappear. As always, eat like you mean it!
