On March 31, Gideon’s Bakehouse posted in their “stories” on social media about the April 2025 cookie. This story stated that Gideon’s Bakehouse would be releasing a “never before seen cookie and it’s awesome. Just saying.” We had our concerns since April 1 is April Fool’s Day. Nevertheless, a brand-new carrot cake cookie can be found at Gideon’s Bakehouse for April.
Carrot Cake Cookie at Gideon’s Bakehouse Disney Springs
Yes, a Carrot Cake Cookie arrived in time for Easter season. The Gideon’s Bakehouse website says this about the new cookie, “Say Hello to our Carrot Cake Cookie! This delightful baby is a delicious blend of flavorful and comforting spices, rich molasses, and finely incorporated carrots with a hint of tart. Completely covered with our crunchy house made candied pecans and a drizzle of our handsome carrot cream cheese glaze. So much flavor in an ultra soft and buttery Cookie complimented by a crunchy exterior!”
This sounded promising, and they said that it was really good. For science, we needed to find out! On April 1, 2025, we arrived at Gideon’s Bakehouse for “Rope-Drop” soon after Disney Springs opened at 9:00 a.m. When visiting Gideon’s Bakehouse, guests should know that it does not open officially until 10:00 a.m. On expected high crowd days, it will open earlier. Still, guests should not expect that.
When Gideon’s Bakehouse opened at 10:00, we quickly moved into the small retail space. Of course, we ordered two Carrot Cake Cookies and a Morning Coffee Cake Cookie, which are only available in the morning until they run out for the day. When you order three or more cookies, you receive a collectible card.
New Carrot Cake Cookie
This brand-new Carrot Cake Cookie will quickly become popular among anyone who enjoys carrot cake. This version of a Gideon’s Bakehouse cookie accomplished the task of being a cookie with carrot cake flavor. The combination of the carrot cake cream cheese glaze with the unexpected white chocolate chips surprised us. The white chocolate chips were not listed in the menu description, but they work well.
In fairness, the white chocolate-flavored chips are actually cream cheese chips. In the afternoon, we confirmed this with a talented staff member at Gideon’s Bakehouse. Still, the flavor of the chips resembles white chocolate more than cream cheese when we tried it. Also, the flavor profile of this new Carrot Cake Cookie tends to be a bit sweeter than most Gideon’s Bakehouse cookies, which have a rich profile but not an overly sweet one.
This new creation shines with the soft interior expected of a Gideon’s Bakehouse cookie. Fans of candied pecans will love it. Also, the touch of molasses enhances this to a higher level.
Overall, we enjoyed this cookie. However, we think you knew that by now. For fans of carrot cake or candied pecans, this could quickly become their top cookie at Disney Springs.
However, this cookie might be messy for guests due to the carrot cake cream cheese glaze. Also, the texture varies from the usual chocolate chip creations from Gideon’s Bakehouse.
This might be one of the best limited-time monthly cookies from Gideon’s Bakehouse. However, guests must like carrot cake. If not, we suggest they pick one of the other fabulous cookies at Gideon’s Bakehouse.
