According to Walt Disney World, the Berry Pavlova at Narcoossee’s comes “artfully crafted with Florida fresh berries and citrus delicately placed over meringue and yuzu crémeux and finished with a tableside pour of anglaise.” It will cost guests $15. What makes this dessert a pavlova, and where did it come from?

Pavlova is a light and airy dessert made of soft, baked meringue topped with sweetened whipped cream and fruit. It works well in many settings. The name is popularly attributed as an ode to the grace of ballerina Anna Pavlova, who entertained both countries during a 1920s tour. Two creation theories circulate: one at a hotel in Perth, Australia, in 1935 and another in Wellington, New Zealand, in 1926.
The feud between New Zealand and Australia dominated the creation of pavlova. Still, most food and beverage creations have disputed origins, making determining the 100% correct history nearly impossible. Food historians can trace a similar dessert back to the 16th century in Europe. Also, food historians suggest that those desserts became an everyday use of cornstarch and were carried to Australia and New Zealand as a recipe on boxes. After that, the predecessors to the modern-day dessert which evolved in New Zealand and Australia. Like most food origin narratives, this one displays the global nature of all cuisine.
