Universal Orlando Mardi Gras started on February 1, 2025. We went to try one of the heavily promoted items, Hot Maple Lacquered Salmon.

Universal Mardi Gras: International Flavors of Carnaval event runs through March 30, 2025. This event features concerts, parades, and food.

The “Canada” Mardi Gras food and beverage location at Universal Orlando usually offers hearty food like poutine. Though Margherita Poutine is at the Canada booth, we focused on the Hot Maple Lacquered Salmon. Universal Orlando mentioned this Mardi Gras food option in every piece of food promotional material leading up to the event.

At the Canada food and beverage booth in the New York area of Universal Studios Florida theme park, guests can buy a serving of Hot Maple Lacquered Salmon. The menu description for this item indicates that guests get “griddled salmon fillet with a maple lacquer and an ancient grain mixed salad.”

At this point, we have tried this Mardi Gras food item three times and have experienced three different levels of quality with this salmon dish. Our first experience left us saying it was good but not worth the high price point. The salmon was well prepared with a tasty maple coating. Still, the lower quality of the salmon hindered it from being great. In fairness, most of our group thought this salmon dish was excellent. The ancient grain mixed salad makes a nice non-traditional touch for a food festival item. Still, some guests will not find it appealing due to the texture.

However, we had the Hot Maple Lacquered Salmon again in another setting on the opening day of the Mardi Gras event. This time, the salmon tasted higher quality. Our third experience was somewhere in between in terms of quality. Nevertheless, the lacquer process functions as the best part of this dish.

When deciding whether the Hot Maple Lacquered Salmon is a hit or a miss, one might determine it can be both. We understand how some orders of this salmon dish may end up being below average (if not bad) for the $14,99 price tag before any discounts. However, our experiences lead us to believe the Hot Maple Lacquered Salmon will be an above-average Mardi Gras food choice for most guests. We would give it a much higher endorsement if the festival food item’s price were not so high.
